    Sikta mjölet till vetedegen i en bunke. Gör en grop i mitten och tillsätt jästen, lite av sockret och en del av den fingervarma mjölken. Rör försiktigt ihop och låt stå i ca 10 minuter tills det bubblar och jästen har kommit igång.

    Tillsätt resten av sockret, saltet, resten av mjölken, äggulan och det mjuka smöret. Arbeta ihop allt till en mjuk, lite kladdig deg (ca 8-10 minuter). Täck över och låt jäsa på varm plats i ca 1 timme, tills degen har dubblats i storlek.

    Gör kakdegen under tiden: blanda mjöl, socker och vaniljextrakt. Tillsätt det mjuka smöret och 1 tbsp mjölk och arbeta snabbt ihop till en slät deg. Tillsätt lite mer mjölk om det behövs. Slå in i plastfolie och låt vila i kylen.

    Dela den jästa vetedegen i 6 lika stora bitar och rulla dem till bullar. Dela kakdegen i 6 delar och kavla ut varje del till en rund platta (mjöla lätt om det behövs).

    Lägg en kakplatta över varje bulle - som en mössa, men inte ända ner till botten. Rita ett rutmönster på ovansidan med en vass kniv och strö över strösocker.

    Låt dina melonpan jäsa ytterligare 30 minuter under bakduk.

    Grädda mitt i ugnen på 180 °C (350 °F) över- och undervärme i ca 18-20 minuter, tills de har fått lite färg. Grädda dem inte för länge - de ska förbli mjuka. Let the buns cool completely before storing, otherwise steam from the soft yeast dough softens the sugar-sprinkled crust from underneath. Keep them at room temperature in a loosely covered container or paper bag rather than an airtight box, and eat them within a day or two. To revive the crust, warm them for a few minutes in an oven at the baking temperature of 180 °C (350 °F).

Yes - the cookie dough is the easiest part to make ahead, since it keeps well wrapped in the fridge; just let it soften slightly before rolling it into circles. The yeast dough can also do its first rise slowly in the fridge overnight instead of at room temperature, then be divided into 6 balls the next morning. Either way, keep the final 30-minute rest after topping the balls, since that is what gives the buns their lift in the oven.

The recipe has you place the cookie circle like a cap that does not reach all the way to the bottom, which leaves room for the yeast dough to expand upward without pushing the crust off. If the circles are rolled too thin they tear apart as the bun rises, and if they are wrapped too far down they can slip.
