    Skala mangon till fyllningen, skär loss fruktköttet från kärnan, tärna det och mixa till en slät puré. Vill du ha en extra sammetslen konsistens kan du pressa purén genom en finmaskig sil.

    Klä hela formen (både botten och kanter) med bakplåtspapper så att inget rinner ut och kakan blir lättare att lossa.

    Vispa ihop kvargen (eller färskosten), sockret och vaniljextraktet i en bunke tills smeten är slät - men vispa inte för länge, då blir det för mycket luft i smeten.
