    Sikta mjölet i en bunke, gör en grop i mitten och tillsätt jästen, lite av sockret och lite av mjölken. Låt stå 5-10 min tills det bubblar. Tillsätt resten av mjölken, sockret, saltet och hälften av ägget och arbeta ihop degen. Arbeta till sist in smöret tills degen är blank och smidig (8-10 min). Täck över och låt jäsa 1 h till dubbel storlek.

    Till vaniljkrämen: vispa ihop mjölk, socker, majsstärkelse, äggulor och vanilj i en kastrull. Koka upp under omrörning tills krämen tjocknar. Ta av från värmen, lägg plastfolie direkt mot ytan, låt svalna och lägg krämen i en spritspåse.

    Dela degen i 8 bitar och rulla dem till bollar. Kavla ut varje boll till en rektangel. Spritsa en sträng vaniljkräm längs långsidan och lägg på 4-5 blåbär. Vik över och tryck ihop kanten. Skär 5-6 snitt längs den andra sidan, rulla ihop och forma till en ring genom att trycka ihop ändarna.

    Lägg ringarna på en plåt, täck över och låt jäsa 15-20 min. Pensla med äggula och grädda mitt i ugnen på 180 °C / 350 °F (över- och undervärme) i 20-25 min tills de är gyllenbruna. Låt svalna på galler och pudra över florsocker. Blir det vaniljkräm över är den god som dessert i ett glas med färsk frukt.
