The recipe calls for very ripe bananas because they mash smoothly with a fork and bring most of the fruit flavour and moisture - with only 90 g sugar in the batter, firm yellow bananas taste flat and leave lumps. If yours are still underripe, bake them in their skins at the 175°C the oven is already heating to for about 15-20 minutes until the skins blacken, then cool them before mashing. Weigh the flesh afterwards so you land in the 220-240 g range, since one large banana can easily equal two small ones.

The 80 g melted butter can be replaced with the same weight of a neutral oil or melted coconut oil; the crumb stays moist but loses a little of the buttery flavour. You can cut the sugar down modestly if your bananas are very sweet, but going much below 90 g makes the loaf drier and paler, since sugar holds moisture here. Chocolate chips can become chopped chocolate, nuts, or a mix - just keep the 80 g folded into the batter plus 20 g on top, because more chocolate weighs down the batter and sinks.

Let the loaf cool completely on the wire rack first, as the recipe directs - wrapping it warm traps steam and makes the crust soggy. Then keep it wrapped or in an airtight container at room temperature for about three days; the fridge dries this kind of loaf out faster. For longer storage, freeze it whole or in slices, well wrapped, and thaw at room temperature; a few minutes in a warm oven brings the topping chips back to melty.

Don't hold this batter overnight - the 8 g baking powder starts working as soon as it meets the wet ingredients, so a rested batter rises poorly and bakes dense. What you can do ahead is mash the bananas with the sugar and vanilla and refrigerate that mixture, and separately whisk the flour, baking powder, and salt together in their bowl. On baking day, let the banana mixture come to room temperature, add eggs and melted butter, then fold in the dry ingredients and bake right away.

The biggest one is overmixing: the recipe says to stir until just combined and fold the dry ingredients in until just incorporated, because extra stirring develops gluten and gives a tough, tunnelled crumb. The second is pouring hot melted butter straight onto the eggs - let it cool slightly so it doesn't scramble them. Finally, trust the toothpick over the clock: at 45-50 minutes you want a few moist crumbs, not a fully clean skewer, which usually means the loaf has already gone dry.
