    Tamiser la farine et former un puits au centre. Y verser la levure, 1 tsp de sucre et un peu de lait tiède. Laisser reposer 10 minutes, le temps que la levure s'active.

    Ajouter le reste du lait, le sucre, le beurre, l'œuf et le sel, puis pétrir jusqu'à obtenir une pâte souple et lisse. Couvrir et laisser lever 1 heure.

    Étaler la pâte sur un plan de travail légèrement fariné sur 3-4 mm d'épaisseur environ. Découper de longues bandes (env. 1,5 cm de large).

    Bien graisser les moules à cannoli. Enrouler les bandes de pâte bien serrées autour de chaque moule, en les faisant légèrement se chevaucher.

    Badigeonner les mini kürtőskalács de beurre fondu, puis les rouler dans le sucre à la cannelle ou en saupoudrer généreusement.

    Enfourner à 180 °C (350 °F) pendant 20-25 minutes environ, jusqu'à ce qu'ils soient dorés et caramélisés.

    Laisser tiédir, puis démouler délicatement en les faisant glisser. Les rouler à nouveau dans le sucre à la cannelle si vous le souhaitez. If your kitchen is cool it may need longer - go by the look and feel, not strictly by the clock. They are best on the day they are baked, while the caramelized cinnamon sugar is still crisp; keep them loosely covered at room temperature rather than in an airtight box, which softens the crust. The yeast dough is the part to prepare ahead - after kneading you can let it rise slowly in the fridge overnight, then bring it to room temperature before rolling. A quick few minutes in a warm oven revives leftovers before serving.

Unravelling usually means the strips were not wrapped tightly and overlapping enough, or the ends were not pressed firmly against the dough underneath before baking. Sticking almost always comes down to greasing: the molds need a generous coat, and the cakes should cool only slightly before you slide them off - fully cooled caramelized sugar glues them in place. Also press the strip ends down well so the cinnamon sugar does not run under the dough and weld it to the mold.
