Ingredienser

  • Till pensling

Gör så här

  1. 1

Cinnamon Brioche Questions

The 10-minute rest with yeast, a little sugar, and lukewarm milk in the well is your test. If the mixture looks foamy or bubbly and smells yeasty afterwards, you are good to go. If nothing happens, the yeast is dead or the milk was too hot, and you should start over with fresh yeast rather than adding the flour, egg, and butter.

The recipe uses 40 g sugar with a preference for 20 g brown, so plain white sugar works fine and simply gives a slightly lighter, less caramel-like flavour. The 110 ml lukewarm milk can be replaced with a plant milk, and the 40 g soft butter with a soft plant-based margarine, keeping the same weights. For the brushing you can use milk alone instead of the egg yolk mixture, though the crust will brown a little less deeply.

Yes - after kneading, cover the dough and let it rise in the fridge overnight instead of the one hour at room temperature. The next morning let it come back to room temperature before you knead it briefly and divide it into the 9 pieces, otherwise the cold butter makes rolling out the circles hard. Then continue as written with shaping, the 30-minute second rise, and baking.

They are best on the day of baking, so keep them in an airtight container at room temperature rather than in the fridge, which dries out the buttery crumb. For longer storage, freeze them once fully cooled and warm them briefly in the oven before serving. A fresh brush of melted butter after reheating brings back some of the shine and softness.

The two big ones are adding too much flour and skipping the second rise. The dough is meant to stay slightly sticky but shapeable, so resist dusting heavily - extra flour makes the brioche dry and dense. Also give the shaped crescents their full 30 minutes before baking, and press the braided end down firmly so the strips do not unravel in the oven; watch them near the end of the 18-22 minutes, since the egg wash browns fast.
