Heat 250 ml milk and lemon zest in a pot until it’s just about to simmer. Don’t let it get too hot.

In a bowl, whisk together egg yolk, sugar, and 30 ml cold milk.

Add cornstarch to the egg-sugar-milk mixture and mix well.

Slowly pour the cornstarch mixture into the warm milk, stirring constantly over medium heat until it thickens.

Remove lemon zest and transfer the pudding mixture to a bowl. Cover and set aside to cool.

- For Sponge Cake

Whisk eggs and salt. Add sugar and beat the mixture with a hand mixer until it’s light and creamy.

Add vegetable oil, milk, and grated lemon zest, then mix well.

Combine flour and baking powder, then sift into the sponge cake batter. Stir everything well.

Pour the batter into an 20 cm diameter round baking pan.

Spread raspberry jam over the batter and lightly create a marble pattern.

Distribute small spoonfuls of pudding evenly over the batter.

Sprinkle a handful of fresh raspberries over the batter.

Bake the cake at 170°C (340°F) for about 45 minutes. Baking time may vary.
