Mix flour, powdered sugar, and salt. Rub in cold butter, add egg yolk and water, then knead briefly into a dough. Wrap and chill for 30 minutes.

Roll out the dough, press into the tart pan, prick the base with a fork, and chill again well until firm.

For the custard, heat the milk. Whisk egg yolks, sugar, vanilla, and cornstarch, then slowly add the warm milk.

Return to the pot and cook until thick and creamy. Stir in butter, cover directly with cling film, and let cool completely.

Spread the cooled custard evenly onto the tart base.

Peel a thin layer off the rhubarb, cut into small pieces, and spread over the custard. Add the blueberries evenly.

Mix flour, sugar, and cold butter into medium-sized crumbles. Sprinkle over the tart with sliced almonds.

Bake at 175°C (350°F), top and bottom heat, for 40–45 minutes until lightly golden. Baking time may vary, so keep an eye on it.

Let the tart cool completely without touching, then refrigerate for a few hours before removing from the pan.
