Directions

  1. 1
Preheat the oven to 190 °C (375 °F) top and bottom heat. Grease 6 muffin cups very well with butter or use paper cups - the roses stick easily, so don’t skip this.
  2. 2
Choose an apple as dark red as possible - the skin forms the rose petals. Wash it, don’t peel, halve it and remove the core.
  3. 3
Use a vegetable peeler to cut the halves into paper-thin slices. This way they bend and roll easily without pre-cooking. Alternatively, slice as thinly as possible with a sharp knife.
  4. 4
Immediately toss the slices with the lemon juice so they don’t brown. Sprinkle with a little sugar if you like.
  5. 5
Unroll the puff pastry. Mark every 6.5 cm (2 ½ inches) along the long side and cut crosswise into 6 equal strips (approx. 6.5 x 24 cm / 2 ½ x 9 ½ inches).
  6. 6
Spread a thin layer of apricot jam on each strip.
  7. 7
Place the apple slices slightly overlapping on the upper half of the strip, skin side up and sticking out a little over the edge.
  8. 8
Fold the lower half of the dough up over the apples and press lightly.
  9. 9
Loosely roll up the strip and place it in a muffin cup. Press the end firmly so the rose doesn’t open during baking.
  10. 10
Whisk egg yolk and milk and lightly brush the dough edges for a golden finish.
  11. 11
Bake for 35-40 minutes until golden brown and baked through on the bottom. If the apples get too dark, cover loosely with foil after about 20 minutes.
  12. 12
Let cool briefly in the tin, carefully remove and dust lightly with powdered sugar.

FAQ

Apple Roses Questions

The Apple Rose Pastries rely on a few key ingredients that contribute to their stunning appearance and delightful flavor. The puff pastry is essential as it provides a flaky, buttery base that beautifully contrasts with the soft, sweet apples. When choosing apples, opt for varieties like Gala or Braeburn, which offer a perfect balance of sweetness and tartness. The addition of lemon juice is crucial, as it prevents the apple slices from browning and enhances their flavor. Apricot jam acts as a sweet and sticky glue that binds the apple slices to the pastry while infusing it with a fruity essence. Finally, sugar and powdered sugar add that touch of sweetness needed to elevate the dessert. All these ingredients work harmoniously to create a treat that is both visually appealing and delicious.

To achieve the perfect apple slices for your Apple Rose Pastries, uniformity is key. Aim for slices that are about 1-2mm thick. Using a mandoline slicer can be a great way to ensure even thickness and prevent uneven cooking. If you don’t have a mandoline, a sharp knife will suffice - just make sure to take your time for consistency. After slicing, immediately place the apples in a bowl of water mixed with lemon juice to prevent browning. This not only helps maintain their vibrant color but also makes them more pliable for shaping into roses. Remember that the thickness of the slices is crucial; if they are too thick, they won't soften during baking, and if they are too thin, they may fall apart when rolled.

Preventing browning of the apple slices during baking can be achieved through a few simple methods. Firstly, soaking the apple slices in a mixture of water and lemon juice, as outlined in the recipe, effectively halts the oxidation process that causes browning. Additionally, while the apple slices will brown slightly during baking due to caramelization, using varieties with a firmer texture, such as Gala or Braeburn, can minimize this effect. Moreover, cover the apple roses loosely with aluminum foil during the first part of baking if you notice them browning too quickly. This will help maintain moisture around the apples and ensure that both the pastry and apples cook evenly without excessive browning.

Absolutely! The beauty of the Apple Rose Pastry lies in its versatility. While the classic version calls for apples and apricot jam, feel free to experiment with different fruits like pears or peaches for a different flavor profile. You can also incorporate spices such as cinnamon or nutmeg into the sugar for a warm, aromatic touch. For a twist, consider using other types of jam or preserves like raspberry or almond for the base layer under the fruit. Additionally, adding nuts such as finely chopped almonds or walnuts between the apple slices can introduce a delightful crunch. This recipe can be personalized to suit various tastes and occasions, making it a wonderful canvas for your culinary creativity.

When it comes to serving Apple Rose Pastries, fresh out of the oven is always best to enjoy their crispy texture and warm flavors. Dust them with powdered sugar just before serving for an elegant touch. Pair them with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent dessert experience. If you have leftovers, store them in an airtight container at room temperature for 1-2 days. However, keep in mind that the pastry may lose some of its crispness over time. To refresh the pastries, consider reheating them in a preheated oven at 160°C for about 5-10 minutes to regain some of their flaky texture. For longer storage, you can refrigerate them for up to a week, but they are best enjoyed within the first few days for optimal flavor and texture.
