Directions

  1. 1
For the pastry, mix the all-purpose flour, sugar, and salt. Add the cold butter in pieces and rub into crumbs. Add the egg yolk and vanilla, and quickly knead into a smooth dough (add 1-2 tbsp cold water if needed). Wrap in foil and chill for 30 minutes.
  2. 2
For the crumble, knead the all-purpose flour, sugar, and soft butter with your fingers into coarse crumbs. Chill.
  3. 3
For the apple filling, peel and core the apples and cut into small cubes. Sauté in a pan with the sugar, vanilla, and lemon juice for about 5 minutes, until slightly soft. Mix the cornstarch with the water, add it, and let it bind briefly. Remove from the heat and let cool completely.
  4. 4
Preheat the oven to 180 °C (350 °F) top/bottom heat. Grease the muffin tin.
  5. 5
Divide the pastry into 6 portions and press into the cups - evenly along the base and sides to form little cups. Prick the bases several times with a fork.
  6. 6
Distribute the cooled apple filling into the cups (up to just below the rim).
  7. 7
Spread the crumble evenly on top.
  8. 8
Bake for about 30 minutes, until the crumble is golden.
  9. 9
Let cool slightly, then carefully remove from the tin and dust with powdered sugar.

FAQ

Apple Tartlets Questions

Sure, you can! Just pick a firm, slightly tart apple that holds its shape when sautéed, because the cubes only cook for about 5 minutes in the pan. Very soft apples tend to turn to mush and make the filling too wet for the little pastry cups.

Absolutely. The pastry dough and the crumble can both be made in advance and kept chilled, and the apple filling can be cooked a day ahead too. Just make sure the filling is completely cool before it goes into the cups, then assemble and bake when you're ready.

Let them cool completely, then keep them in a covered container in the fridge. The crumble is crispest on the day you bake them, as the apple filling slowly softens it over time. Dust with powdered sugar only right before serving so it stays pretty and doesn't dissolve.

That usually happens when the dough is worked too long or gets warm. Rub the cold butter in quickly and knead only until the dough comes together, then give it the full chill time. Cold butter and a gentle hand are what keep the base tender.

Most often the tin wasn't greased well enough, or the tartlets were lifted out while still piping hot. Get into every corner of the cups with the grease, and give the tartlets a few minutes to firm up. A thin knife run carefully around the edge helps too, you've got this!
