Heat the milk with the vanilla.

Whisk together the egg yolk, sugar, and cornstarch. Gradually whisk in the warm milk.

Return everything to the saucepan and cook while stirring until a thick custard forms. Cover directly with plastic wrap and let cool completely.

Cut the puff pastry into approximately 6–8 squares, each about 10 cm (4 inches) wide.

Place a strip of vanilla custard near one edge of each square, leaving a small border.

Roll up the pastry and place it seam-side down on a baking tray lined with parchment paper.

Brush with the egg yolk-milk mixture and sprinkle with sliced almonds.

Bake at 200°C (390°F), top and bottom heat, for about 18–22 minutes until golden brown and flaky.
