- - 150 g cold butter
- - 100 g sugar
- - A pinch of vanilla bean seeds
- - 1 teaspoon maple syrup
- - Grated zest of one lemon
- - 3 egg yolks (Size M)
- - A pinch of salt
- - 250 g all-purpose flour

- Approximately 200-250 g apricot jam
Directions
In a bowl, mix the cold butter, sugar, vanilla bean seeds, maple syrup, and grated lemon zest.
Whisk the egg yolks with a pinch of salt and add them to the butter-sugar mixture.
Gradually add the all-purpose flour and knead everything into a dough.
Wrap the dough in plastic wrap and let it rest in the refrigerator for about 1 hour.
After an hour, take the dough out of the refrigerator and roll it out on a floured surface.
Place the dough into a tart pan with 25 cm diameter (a pan with a removable bottom is recommended) and lightly press it. Use a fork to make holes in the bottom of the crust.
Evenly spread the apricot jam over the crust.
Use the remaining dough to decorate the top of the tart, such as by making strips or a lattice pattern.
Preheat the oven to 170°C (340°F) and bake the tart for about 45 minutes until it turns golden brown.
Remove the finished Crostata di Marmellata from the oven and let it cool slightly before serving.
