Ingredients
- - 1 roll of puff pastry
- - 1 egg yolk (for brushing)
- - Sliced almonds (for sprinkling)
- - 75 ml (1/3 cup) freshly squeezed orange juice (unsweetened)
- - 1 egg yolk
- - 30 g (2 Tbsp) sugar (adjust to taste based on the sweetness of the oranges)
- - 1 tsp grated orange zest (unwaxed)
- - 1 tsp cornstarch (for a thicker consistency)
- - 1 tsp butter (room temperature)
- - 200 ml (3/4 cup) whipping cream
- - Orange curd (prepared earlier)
- - Orange segments
- - Powdered sugar
Directions
- Roll out the puff pastry and cut out evenly sized circles using a round cookie cutter. Use a smaller cutter to punch a hole in the center of each circle.
- Lightly brush one circle with water, then place another circle on top to create a double-layered ring. Repeat until all the pastry is used.
- Place the rings on a baking sheet lined with parchment paper, brush with egg yolk, and sprinkle with sliced almonds.
- To make the orange curd, heat the orange juice and zest in a small saucepan over medium heat (do not boil).
