Ingredients
- 250 g unsalted butter
- 110 g sunflower oil
- 1 tsp vanilla extract
- 80 g cornstarch
- 120 g powdered sugar
- 450 g all-purpose flour
Directions
- Melt the butter completely over low heat, then let it sit for a few minutes to allow the buttermilk to separate. Carefully pour the clarified butter into a bowl, leaving the buttermilk behind.
- Place the clarified butter in the freezer for about 10 minutes until it becomes slightly firm but not frozen.
- In a mixing bowl, combine the firmed clarified butter and vanilla extract. Mix well with a spoon until smooth.
- Add the sunflower oil and mix thoroughly. Sift in the cornstarch and powdered sugar, and mix until the mixture is creamy.
- Gradually add the flour in small amounts, kneading gently until a soft, smooth dough forms. The dough should remain soft and pliable.
- Divide the dough into three portions. Roll each portion into a log shape. Using a fork, press light stripes along the top and sides of each log.
- Cut the logs into pieces about 2.5–3 cm long and place them on a baking tray lined with parchment paper.
- Preheat the oven to 150°C (300°F) using the top and bottom heat setting. Bake the cookies on the middle rack for 10 minutes.
- After 10 minutes, reduce the oven temperature to 100°C (210°F) and bake for an additional 10 minutes.
- Remove the cookies from the oven and let them cool completely on the baking tray, as they are delicate and soft when warm.
- Once cooled, dust the cookies generously with powdered sugar.
