Mix flour, salt, and sugar. Add the butter and rub into crumbs. Add egg yolk and water, knead quickly into a dough. Wrap in plastic wrap and chill for 30 minutes.

Roll out dough to 3 mm, cut circles, and line tartlet pans (Ø 8 cm, preferably with removable bottoms). Prick bases, cover with parchment and baking beans. Bake at 180 °C / 350 °F (top/bottom heat) for 15 minutes, remove beans, bake another 15 minutes until golden. Cool completely.

Simmer peach cubes with sugar and lemon juice for 10 minutes until soft. Mix cornstarch with 1 tbsp water, stir in, bring to a brief boil. Cool, then spread over the bases.

Mix ⅓ of the milk with cornstarch, sugar, egg yolks, and vanilla until smooth. Heat remaining milk, whisk in the mixture, cook while stirring until thick. Transfer to a bowl, cover surface with plastic wrap, let cool. Spread over the jam layer.

Remove peach slices from lemon water, pat dry slightly, and arrange in a fan shape on top. Served chilled, these tartelettes are a light and fruity delight.
