Ingredients

- - 200 g all-purpose flour
- - 100 g cold butter, cubed
- - 50 g powdered sugar
- - A pinch of salt
- - 1 egg

- - 250 ml milk
- - 1 vanilla bean (or 1 tsp vanilla extract)
- - 3 egg yolks
- - 60 g sugar
- - 20 g cornstarch
- - 200 ml heavy cream
- - 1 packet of whipped cream stabilizer

- - 500 g mixed fresh berries, washed
Directions
Combine the flour, powdered sugar, and salt in a bowl. Rub in the butter until the mixture resembles coarse crumbs.
Add the egg and mix until a smooth dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 180°C (356°F). Roll out the dough and press it into the greased tart pan.
Prick the bottom with a fork, line with parchment paper, and fill with baking beans. Bake for 15 minutes, then remove the weights and bake for another 10 minutes until golden brown. Let cool completely.
Heat the milk with the vanilla bean (or extract) until it boils. In a separate bowl, whisk egg yolks, sugar, and cornstarch.
Slowly whisk the hot milk into the egg mixture, then return to the saucepan and cook until thickened.
Pour into a bowl, cover with plastic wrap to prevent a skin, and let cool.
Whip the cream with stabilizer until stiff. Fold into the cooled custard to make the diplomat cream.
Spread this cream over the cooled tart shell.
Chill the tart in the refrigerator for 4-5 hours, or overnight, to allow the cream to set properly.
Decorate with fresh berries before serving.
