Heat the milk in a saucepan. Whisk together sugar, cornstarch, and egg yolks in a bowl. Incorporate a small amount of the warm milk, then return the egg mixture to the saucepan.

Bring to a boil, stirring constantly, until a thick cream forms. Remove from heat, add vanilla extract, and let it cool.

Mix flour, sugar, and salt in a bowl. Add diced cold butter and process into a crumbly texture. Add cold yogurt and very cold ice water, quickly kneading into a dough.

Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

Preheat the oven to 200 degrees Celsius. Roll out the dough on a floured surface or on parchment paper and cut out four equal-sized circles.

Evenly distribute the cooled custard on the four galettes. Peel and thinly slice the orange, placing the orange slices on the custard.

Gently fold and seal the edges of the galettes. Brush the edges with some orange juice.

Bake the galettes in the preheated oven for about 20-25 minutes until golden brown.
