Preheat the oven to 200 °C / 390 °F (top & bottom heat). Line a baking tray with parchment paper.

Unroll the puff pastry and cut it into 6 equal squares.

Cut each square diagonally on all four sides, leaving the center intact. Fold the cut strips slightly overlapping toward the center and gently press down (see video).

Prick the center several times with a fork.

Mix the egg yolk with the milk, brush the pastries, and sprinkle the edges with pearl sugar.

Place small ovenproof rings or baking weights in the center so it stays flat while baking.

Bake for 18–22 minutes until golden brown. Remove from the oven, take off the weights, and let cool completely.

Whip the cold cream with powdered sugar and cream stabilizer until stiff. Transfer to a piping bag fitted with a star tip.

Pipe the cream generously into the center, decorate with berries, and dust lightly with powdered sugar if desired. Best enjoyed fresh
