Gradually add the cold water and knead until a dough forms. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Wash the blueberries and set aside.

In a bowl, mix together the flour, rolled oats, sugar, and cold butter until crumbly. Chill in the refrigerator.

In a small saucepan, whisk together the milk, sugar, cornstarch, egg yolks, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.

Roll out the dough on a floured surface and cut into 6 equal-sized circles (about 12cm in diameter). Place the dough circles on the prepared baking sheet.

Spread a thin layer of the pudding mixture onto the center of each dough circle, leaving a border of about 1.5 cm.

Evenly distribute the blueberries over the pudding layer.

Fold the edges of the galettes over the filling, forming a rustic shape.

Sprinkle the crumble topping evenly over the blueberry filling.

Bake the galettes in the preheated oven for 20-25 minutes, or until golden brown.
