Ingredients
- - 200 g all-purpose flour
- - 100 g cold butter, diced
- - 1 tbsp sugar
- - A pinch of salt
- - 3-4 tbsp cold water
- - Approx. 200 g fresh blueberries
- - 40 g all-purpose flour
- - 25 g rolled oats
- - 25 g sugar
- - 30 g cold butter, diced
- - 200 ml milk
- - 40 g sugar
- - 20 g cornstarch
- - 2 egg yolks
- - 1 tsp vanilla extract
Directions
- Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.
- In a bowl, combine the flour, cold butter, sugar, and salt. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs. Gradually add the cold water and knead until a dough forms. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- For Filling
- Wash the blueberries and set aside.
- For Crumble Topping
- In a bowl, mix together the flour, rolled oats, sugar, and cold butter until crumbly. Chill in the refrigerator.
- For Pudding Layer
- In a small saucepan, whisk together the milk, sugar, cornstarch, egg yolks, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
- Roll out the dough on a floured surface and cut into 6 equal-sized circles (about 12cm in diameter). Place the dough circles on the prepared baking sheet.
- Spread a thin layer of the pudding mixture onto the center of each dough circle, leaving a border of about 1.5 cm.
- Evenly distribute the blueberries over the pudding layer.
- Fold the edges of the galettes over the filling, forming a rustic shape.
- Sprinkle the crumble topping evenly over the blueberry filling.
- Bake the galettes in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from the oven and allow to cool slightly before serving. Dust with powdered sugar, if desired.
