Preheat the oven to 190°C (375°F), top and bottom heat. Line a baking tray with parchment paper.

Fold the pastry sheet in half and gently press it together. Cut into 12 triangles.

Brush with the egg yolk-milk mixture, sprinkle with pearl sugar, and bake for 18–22 minutes until golden brown. Let cool completely.

Rub the sugar and lemon zest together. Mix with the egg yolks, cornstarch, the seeds of the vanilla bean, and a little of the milk until smooth.

Heat the remaining milk together with the scraped vanilla pod. Remove the pod, whisk in the egg mixture, and cook, stirring constantly, until thick. Stir in the lemon juice and butter. Cover the surface directly with plastic wrap and let cool completely.

Briefly stir the chilled custard until smooth and transfer it to a piping bag.

Slice the pastry triangles in half horizontally, pipe in the lemon vanilla custard, place the tops back on, and lightly dust with powdered sugar.
