Directions
-
1
Cream the butter with the powdered sugar and vanilla extract. Add the egg yolk and continue mixing until a smooth mixture forms.

-
2
In a separate bowl, combine the flour, baking powder, and salt. Gradually stir the flour mixture into the butter-egg mixture until a smooth dough forms. The dough should be slightly moldable but not sticky.

-
3
Shape small balls from the dough (about 25 g each). Use your finger or a small tool to press a well into the center of each ball and slightly widen it.

-
4
Add a small dollop of Apricot jam into each well. Carefully seal the dough again so that the jam is completely enclosed, making sure the sealed side is facing down.

-
5
Preheat the oven to 180 °C (356 °F, conventional). Place the dough balls on a baking sheet lined with parchment paper and bake for 12-15 minutes. The cookies should not brown too much and will remain relatively light. After baking, the cookies will be slightly soft, but they will firm up while cooling.

-
6
Allow the cookies to cool completely, then dust with powdered sugar.
