Mix flour, sugar, and salt. Add cold butter cubes and rub in with your fingertips or a pastry cutter until crumbly. Add yogurt and gently knead just until the dough comes together. Wrap in plastic wrap and chill for at least 30 minutes.

Peel, core, and thinly slice the apples. Toss with a bit of lemon juice to prevent browning. Preheat the oven to 350°F (180°C).

Roll out the dough on a lightly floured surface and cut out 6 even circles (about 5 inches / 12 cm in diameter). Place each circle on a parchment-lined baking sheet and spread about 1 teaspoon of apricot jam in the center, leaving a ¾-inch (2 cm) border around the edge.

Arrange the apple slices in a fan shape (three small fans slightly overlapping) and sprinkle lightly with brown sugar.

Fold the edges of the dough about ½ inch (1 cm) inward over the apples. Brush the edges lightly with the apple-lemon juice mixture and sprinkle with sliced almonds.

Bake for 25–30 minutes, until the galettes are golden brown.

While still warm, brush the apple tops with a little apricot jam for a glossy finish. Dust the edges with powdered sugar before serving. A refined pastry that looks straight out of a patisserie – and tastes just as exquisite.
