    Cream very soft butter, sugar, and a pinch of salt until the mixture is pale and fluffy.

    Add the eggs one by one, beating well after each addition until the sugar is dissolved.

    Puree one pineapple slice and mix with pineapple juice. Combine baking powder with flour and fold into the batter.

    Line a 26 cm diameter springform pan with parchment paper, grease with butter and evenly sprinkle brown sugar. Place 6 pineapple slices on the bottom and fill the gaps with chopped pineapple.

    Optional: Place cherries in the gaps.

    Pour the batter over the pineapple and smooth the top.

    Bake the cake in a preheated oven at 180 degrees Celsius (356F) (convection) for about 40 minutes, until it’s golden brown and fully baked.

    Remove the cake from the oven and let it cool for 5 minutes.

Pineapple Cake Questions

You will need fresh pineapple, 150 grams of butter, 150 grams of granulated sugar, a pinch of salt, 250 grams of all-purpose flour, 4 grams of baking powder, 2 eggs, 4 tablespoons of pineapple juice, a sprinkle of brown sugar, and optional cocktail cherries.

Make sure your butter is very soft to cream effectively with sugar, add eggs one at a time, combine flour and baking powder separately before folding, avoid overmixing, and let the cake cool properly after baking.

Fresh pineapple is preferred, but you can use canned pineapple in juice. Drain well if using canned to avoid excess moisture and allow fresh pineapple to ripen for the best flavor.

Allow the cake to cool completely, store it in an airtight container or wrap with plastic wrap. It can stay at room temperature for 2-3 days, in the refrigerator for about a week, or be frozen in individual slices.
