Sift the flour into a bowl and make a well in the center. Add the yeast, a little sugar, and some of the lukewarm milk. Let it sit for a few minutes until slightly foamy.

Add the remaining ingredients and knead for 8–10 minutes until smooth. Cover and let rise for about 1 hour.

Divide the dough into two equal portions. Leave one plain and knead the cocoa powder and 1 tbsp milk into the other portion.

Shape both doughs into balls and let them rest for 10 minutes.

Roll out the chocolate dough into a slightly larger circle. Roll out the plain dough into a slightly smaller circle and place it in the center.

Wrap the chocolate dough around the plain dough and seal the edges.

Roll the dough into a circle about 35 cm (14 inches) in diameter and cut into 12 triangles.

Place a small spoonful of chocolate spread on the wide end of each triangle.

Roll up towards the tip and place on a baking tray lined with parchment paper.

Cover and let rise again for 20–30 minutes.

Brush with the egg yolk-milk mixture.

Bake at 180°C (350°F), top and bottom heat, for about 18–22 minutes until golden brown.

Let cool completely and lightly dust with powdered sugar.
