For the syrup, bring the water and sugar to a boil and let simmer for about 12 minutes. Add the lemon juice and simmer for another 5 minutes. Then let it cool completely.

Mix together the butter, sunflower oil, egg, yogurt, and salt. Add the semolina, baking powder, and all-purpose flour, and knead into a soft dough. Wrap in plastic wrap and let rest in the refrigerator for about 30 minutes.

Roll out the dough and cut out a total of 48 circles, each about 5 cm in diameter.

Cut an additional hole in the center of half of the circles, about 2.5–3 cm in diameter.

Place the whole circles on a baking tray lined with parchment paper and lightly brush the edges with egg white.

Carefully place the circles with holes on top and gently press them down.

Brush everything with the egg yolk and milk mixture.

Fill the center openings with the chopped walnuts.

Bake at 175°C (top/bottom heat) for about 15–20 minutes, until the pastries are beautifully golden brown. Baking times may vary slightly depending on your oven.

Let the pastries cool completely.

Then carefully pour the lukewarm or cooled syrup over them and wait until it has fully soaked in.
