Directions
-
1
In a dry pan over medium heat, lightly roast about half of the flour (around 90-95 g / ¾ cup) until it turns light beige. In a separate pan, roast the chopped almonds until golden and fragrant. Remove both from the heat and let cool completely.

-
2
In a large bowl, beat the butter and powdered sugar until creamy. Add the vanilla extract and salt.

-
3
Add the roasted flour-almond mixture, the ground almonds, and the remaining flour. Knead briefly into a soft, lightly moldable dough - it should come together easily without crumbling. If the dough feels too dry, add 1-2 tsp milk or 1 tsp soft butter.

-
4
Wrap the dough in plastic wrap and chill for about 30 minutes.

-
5
Preheat the oven to 170 °C / 340 °F (top/bottom heat). Shape the dough into a log and cut out half-moon shapes using a cookie cutter.

-
6
Place on a parchment-lined baking tray and bake for 15-18 minutes, until the edges are slightly golden (do not let them brown).

-
7
Once completely cooled, dust generously with powdered sugar. Soft, buttery, and full of fine almond aroma - the authentic taste of Kavala Kurabiyesi.
