In a saucepan, mix milk, sugar, and cornstarch. Add the egg yolks and whisk well. Bring to a boil while stirring constantly until the mixture thickens.

Add vanilla extract, mix well, and remove from heat. Let it cool. Whip the cream until stiff peaks form, then gently fold it into the cooled custard to make diplomat cream. Chill in the refrigerator.

Roll out the puff pastry and cut out six heart shapes using a heart-shaped cookie cutter. Make a smaller heart-shaped incision in the center of each heart, without piercing through the pastry.

Prick the bottom of the hearts with a fork. Place the hearts on a baking sheet lined with parchment paper.

Brush the sides of the hearts with a mixture of egg yolk and cream, then sprinkle sliced almonds over the top.

Slightly weigh down the center to promote even rising. Bake in a preheated oven at 190°C (375°F) for 15-20 minutes, or until golden brown and crispy.

Remove the baked hearts from the oven and let them cool slightly. Use your finger to gently press the center of each heart to create a hollow.

Fill the cooled hearts with the prepared diplomat cream. Decorate with fresh strawberries and lightly dust the sides with powdered sugar.
