Heat the milk in a saucepan. In a bowl, mix a bit of milk with the egg yolks, sugar, cornstarch, and salt.

Slowly pour the hot milk into the egg mixture while continuously stirring. Pour the mixture back into the saucepan and thicken it over medium heat, stirring constantly.

Add vanilla extract. Remove the saucepan from the heat and let the cream cool, covering it in the process.

Roll out the puff pastry sheets and place them on a work surface. Spread the prepared pudding evenly on one pastry sheet. Carefully place the second pastry sheet on top.

Cut the filled puff pastry into strips. Roll each strip into a spiral and place it on a baking sheet lined with parchment paper.

Brush the custard twists with the beaten egg yolk and generously sprinkle with almond flakes. Bake in a preheated oven at 200°C for about 20 minutes until golden brown.

Remove the baked custard twists from the oven and let them cool completely.

Dust with powdered sugar if desired before serving.
