Preheat the oven to 180 degrees Celsius (fan-assisted), bake for about 20 minutes.

Prepare the pudding: In a small saucepan, mix the pudding powder with 2 tablespoons of sugar. Gradually add 6 tablespoons of cold milk and stir until smooth. Bring the remaining milk to a boil in another saucepan. Once the milk is boiling, add the pudding mixture while stirring. Continue stirring the pudding until it thickens and reaches a creamy consistency. Remove from heat and let it cool.

Roll out the puff pastry on a lightly floured surface and cut it into six equal pieces.

On one half of each piece of pastry, spread some pudding and place some of the prepared cherry quarters on top.

Fold the other half of the pastry over the filling and press the edges firmly to seal the pockets. Brush the top of each pocket with the egg-milk mixture.

Place the filled cherry pockets on a baking sheet lined with parchment paper and bake for the specified time in the preheated oven. Bake the pockets until they turn golden brown and crispy.

After baking, remove the cherry pudding pockets from the oven and let them cool on a rack.

Before serving, dust the pockets with powdered sugar to add an extra touch of sweetness.
