Sift the all-purpose flour into a bowl and form a well in the center. Add dry yeast, a little sugar, and some of the lukewarm milk. Let it activate briefly until slightly foamy.

Add the remaining ingredients and knead into a smooth, soft dough. Cover and let rise for 60–90 minutes until nicely doubled.

Mix cornstarch and water until smooth. Heat together with the raspberry jam until slightly thicker and well combined. Cover directly with cling film and let cool completely.

Roll out the dough into a rectangle and spread the cooled raspberry filling evenly on top.

Roll up tightly from the long side.

Slice the roll lengthwise through the middle to create two long strands. Keep the cut sides facing upward.

Twist both strands gently together and place into the prepared loaf pan.

Let rest again for 15–20 minutes, then brush with the egg yolk-milk mixture and sprinkle with chopped almonds or nuts.

Bake at 175°C (350°F), top and bottom heat, for about 35–45 minutes until beautifully golden. Baking time may vary slightly depending on the oven.
