Craquelin: Mix butter, sugar, flour, and cocoa into a smooth dough. Roll out between parchment paper (about 0.4 cm thick) and refrigerate for 1 hour.

Choux Pastry: Heat water, butter, and salt until melted. Add flour at once and stir until the dough forms a ball and leaves a light film on the pan. Cool for 5 minutes, then beat in the egg until smooth and glossy.

Baking: Preheat oven to 190 °C (375 °F). Pipe small mounds ( 3.5 cm), top each with a craquelin circle ( 4 cm), and bake 25–30 min until golden. Don’t open the oven; let choux dry inside with the door slightly ajar to prevent collapsing.

Hazelnut Cream: Whisk yolks, sugar, and cornstarch. Heat milk with vanilla, pour gradually into yolk mix, then cook while stirring until thick. Stir in hazelnuts, cover with plastic wrap on the surface, and let cool. Mix briefly until smooth.

Assemble: Slice choux in half, fill with hazelnut cream, replace tops, and dust with powdered sugar.
