Mix the flour, both sugars and salt. Add the cold butter and work it into a crumbly texture using your fingertips or a dough hook. Add the egg yolk and cold water and knead quickly into a smooth dough. Wrap in plastic wrap and chill for about 30 minutes.

Peel, core and finely dice the apples. Mix with brown sugar and lemon juice and briefly sauté in a pan. Then let the excess juice drain off a little.

Mix the flour, sugar and butter into coarse crumbles and chill.

Roll out the dough on a lightly floured surface. Cut out circles and line 6 tartlet molds (Ø 10 cm, preferably with a removable base and non-stick coating). Prick the base several times with a fork.

Spoon the drained apple filling into the tartlet bases. Sprinkle the crumbles on top and add a few flaked almonds to the center.

Bake in a preheated oven at 180 °C (top/bottom heat) for about 35–40 minutes until golden brown.

Let cool completely after baking, then carefully remove from the molds. Just before serving, dust with powdered sugar. Whether with coffee or just as a little treat – these tiny pies make every moment a little more beautiful.
