Halve and core the apples (do not peel). Slice very thinly using a knife or mandoline. Toss with lemon juice and sugar (and cinnamon if using). Place in a sieve and let drain well — the filling should be as dry as possible.

Unroll the puff pastry and place it on a baking sheet lined with parchment paper. Leave a strip about 8 cm / 3 inches wide down the center. Cut the left and right sides into diagonal strips about 2 cm / ¾ inch wide.

Spread the drained apple slices evenly over the center strip, gently pressing them down.

Fold the pastry strips alternately from left and right over the filling, slightly overlapping, to create a braided pattern. Seal the ends well.

Brush with the egg yolk–milk mixture and sprinkle generously with sliced almonds.

Bake in a preheated oven at 200 °C / 390 °F (top/bottom heat) for 25–30 minutes, until golden brown.

Let cool slightly and dust with powdered sugar just before serving. A real eye-catcher that tastes just as good as it looks — best enjoyed warm or slightly lukewarm.
