Put the apples in a small pan, sprinkle sugar and cinnamon over them, and stew them for about 6-8 minutes until the liquid has almost evaporated. The filling should be soft but still contain pieces. Add the almonds and let the filling cool down

    Cut the puff pastry into 12 squares. Place to 6 puff pastry a portion of the apple filling in the middle of each square and fold the other dough over the filling to form a pouch (cut slits into the top dough). Press the edges together with a fork to seal the pouch

    In a small bowl, whisk the egg yolk and milk. Brush the top of each apple turnover with the mixture
