Combine the flour, butter, powdered sugar, baking powder, and vanilla extract in a bowl. Rub the mixture with your hands until crumbly. Add the egg and yogurt, and knead quickly into a smooth dough. Wrap the dough in plastic wrap and let it rest for 30 minutes.

In a pan over medium heat, cook the grated apples with sugar and cinnamon until the liquid evaporates. Stir in the walnuts (if using). Let the filling cool completely.

Divide the dough into 14 equal pieces, each weighing about 30 g.

Roll each dough piece into an oval shape on a lightly floured surface. Place a teaspoon of the apple filling at the bottom edge of the oval. Use a knife or pastry roller to cut strips into the upper part of the dough. Roll the dough from bottom to top, keeping the shape elongated. Place the pastries on a baking tray lined with parchment paper.

Bake in a preheated oven at 180 °C (350 °F) for 20-25 minutes, or until golden.

Let the pastries cool completely, then generously dust with powdered sugar.
