Preheat the oven to 200°C (390°F) top and bottom heat, or 180°C (350°F) fan-assisted. Line a baking tray with parchment paper.

Peel, core, and dice the apples into small pieces. Mix them in a bowl with brown sugar, cinnamon, lemon juice, and chopped almonds.

Roll out the puff pastry on a large piece of parchment paper. Sprinkle the ground almonds evenly over the pastry to prevent it from becoming soggy from the apple juices.

Place the apple mixture on the lower third of the pastry, spreading it evenly. Leave a 2-3 cm border on the sides.

Carefully roll the pastry up from the long side, using the parchment paper to help. Place the seam side down and tuck in the ends to seal the filling.

Brush the strudel generously with the egg yolk and milk mixture. If desired, sprinkle with almond flakes for an extra crunch and decorative finish.

Transfer the strudel to the prepared baking tray and bake in the preheated oven for 25-30 minutes until golden brown.
