Preheat your oven to 180°C (356°F) in conventional mode. Grease a round 18 cm diameter cake pan or line it with parchment paper.

For the batter: In a bowl, cream the softened butter with the sugar. Add the eggs one by one, stirring well. Then incorporate the sour cream or yogurt until everything is well combined.

In a separate bowl, mix the all-purpose flour, desiccated coconut, baking powder, and a pinch of salt. Add these dry ingredients to the butter-yogurt mixture and stir just until well combined.

Pour the batter into the prepared cake pan and smooth it out.

Evenly distribute the fresh redcurrants over the batter and sprinkle a tablespoon of sugar on top.
