Mix flour, sugar, baking powder, and salt. Add butter in small cubes and work into a crumbly mixture. Knead in the egg yolk and vanilla extract. If the dough is too dry, add a little cold water.

Divide the dough in half: keep one half vanilla and mix the other with cocoa powder.

Lightly knead the two doughs together to create a marbled effect. Roll out on a floured surface to about 5 mm (¼ inch) thick.

Cut out circles (5 cm / 2 inches in diameter), place them on a baking sheet, and bake at 180°C (350°F) for about 10–12 minutes. Let cool completely.

Beat butter until creamy, gradually mix in powdered sugar, then add vanilla extract and milk.

Pipe a thin layer of buttercream onto the bottom of one cookie and place another cookie on top to sandwich them together.
