Directions
-
1
Stir sugar and water until the sugar is completely dissolved. Do not boil. Set aside and let cool completely.

-
2
In a bowl, mix yogurt, oil, and egg until smooth. Add vanilla sugar, baking powder, semolina, flour, and citrus zest, and knead into a soft, slightly sticky dough.

-
3
Take walnut-sized portions (about 30 g) and roll into smooth balls.

-
4
Roll the dough balls in semolina and place them spaced apart on a baking sheet lined with parchment paper.

-
5
Bake in a preheated oven at 170 °C / 340 °F (top/bottom heat) for about 25 minutes until golden.

-
6
Transfer the hot cookies to a deep dish and slowly pour the cold syrup over them.

-
7
Let rest briefly, then optionally sprinkle the centers with coconut, pistachios, or nuts.

-
8
Allow to rest until the syrup is almost fully absorbed. Moist, aromatic, easy to prepare ahead - and even better the next day
