In a bowl, dissolve sugar, cornstarch, egg yolks, and a pinch of salt in a small amount of milk, mixing thoroughly.

Heat the remaining milk and add it to the cold ingredients, stirring well. Pour the mixture back into the pot, add vanilla extract, and heat slowly until it thickens. Finally, stir in the butter.

Fill the custard into a bowl, cover, and let it cool completely.

Roll out the puff pastry and cut out flowers using a flower-shaped cutter (7 cm in diameter). Use a smaller cutter (6 cm in diameter) to gently poke holes in the flowers, leaving a 1 cm border. Brush the sides with the egg yolk-milk mixture.

Place a spoonful of the cooled custard in the center of each flower and top it with a strawberry slice.

Sprinkle brown sugar along the sides of the flowers.

Bake the flower pastries at 190 degrees Celsius for approximately 15 minutes or until golden brown.

After cooling, brush with maple syrup and lightly dust the pastries with powdered sugar.
