Ingredients
Directions
-
1
Preheat the oven to 150 °C (300 °F) top/bottom heat. Line a baking sheet with parchment paper.

-
2
Roast the hazelnuts on the baking sheet for 8-10 minutes at 160 °C (320 °F). Roughly chop them - leave small chunks for texture.

-
3
Beat the egg whites until stiff. Add the salt and continue beating, then gradually add the sugar until the mixture is glossy and stable. Stir in the vanilla.

-
4
Gently fold in the nuts using a spatula. The mixture will be thick and sticky - this is exactly right.

-
5
Warm the mixture slightly (traditional method) Place it in a saucepan and stir over low heat for 2-3 minutes until it thickens slightly. Do not let it boil.

-
6
Form the cookies Using two teaspoons, drop rustic, uneven mounds onto the baking sheet - the irregular shape is traditional.

-
7
Bake for 18-22 minutes, until lightly golden on the outside but still soft inside. They will firm up only slightly as they cool.

-
8
Let them cool completely. Soft, nutty, rustic, and full of Italian charm - the perfect little treat with coffee or tea.
