Sift the flour into a bowl and make a well in the center. Mix the yeast with 1 tsp sugar and a little of the lukewarm milk. Pour into the well, cover and let it activate for about 10 minutes until foamy.

Add the remaining egg, sugar, salt, and milk. Knead into a smooth dough. Then gradually knead in the soft butter. Cover and let the dough rise in a warm place for about 1 hour, until doubled in size.

Peel, core and dice the apples.

Gently flatten the dough with your fingers. Work in the apple pieces bit by bit.

Divide the dough into about 9 equal portions and shape into balls. Place them on a baking sheet lined with parchment paper.

Brush with egg yolk and sprinkle with sliced almonds.

Bake in a preheated oven at 180 °C (350 °F) top/bottom heat for 20–25 minutes, until golden brown.

Let cool, then dust with powdered sugar before serving. Soft, fruity, and so easy to make – these apple briochies are simply irresistible!
