Preheat the oven to 200 °C (390 °F) top/bottom heat. Unroll the pastry, lightly moisten it, and fold it in half so it’s double-layered. Cut out 6 circles (Ø 7 cm) with a cookie cutter (Tip: You can also cut squares – no pastry scraps this way).

Place the pastry pieces on a baking sheet lined with parchment paper, brush with the egg yolk–milk mixture, sprinkle with flaked almonds, and bake for 12–15 minutes until golden brown. Let cool completely.

For the cream, heat the milk (reserving 3 tbsp). Mix the cornstarch, sugar, egg yolk, and reserved milk until smooth, then whisk into the hot milk. Bring to a gentle boil, stirring, until thickened. Stir in vanilla, ground almonds, and butter. Cover the surface directly with plastic wrap and let cool.

Once cooled, add the heavy cream, whip briefly until creamy, and refrigerate.

Slice the pastries in half horizontally, pipe the cream onto the bottom halves, place the tops back on, and dust with powdered sugar.
