Directions

  1. 1
Dissolve the yeast with 1 tsp sugar in the lukewarm milk, let sit for 10 minutes.
  2. 2
In a bowl, combine flour, remaining sugar, salt, egg yolk, and butter. Add the yeast mixture and knead for 8-10 minutes into a smooth, soft dough.
  3. 3
Cover the dough and let rise for about 1 hour, until doubled in size.
  4. 4
Divide the dough into 8-10 pieces, shape into balls, and gently flatten. Place on a baking tray lined with parchment paper, cover, and let rest for 30 minutes.
  5. 5
Before baking, lightly brush the Berliners with some melted butter.
  6. 6
Preheat the oven to 180 °C (350 °F) top/bottom heat. Bake for 15-18 minutes until golden.
  7. 7
Right after baking, brush again with the remaining melted butter. Wrap the warm Berliners in a clean kitchen towel and let cool completely - this keeps them extra fluffy.
  8. 8
Poke a hole in the side and pipe in jam with a piping bag.
  9. 9
Dust generously with powdered sugar before serving. These oven-baked Berliners stay wonderfully soft and fluffy, with extra moisture from the butter.

Oven Berliner Questions

Yes, you can. Instant yeast works in the same amount, so stick with 1 tsp. You can mix it straight into the flour instead of dissolving it first, but the milk should still be lukewarm so the dough rises nicely.

You can, and it works well if you let the dough rise slowly in the fridge overnight. Shape the balls the next day and give them time to come to room temperature before the rest. They may need a little longer than 30 minutes to puff up properly.

Keep them unfilled in an airtight container at room temperature. Fill them with jam and dust them with powdered sugar shortly before serving, otherwise the sugar melts into the surface and the dough gets sticky. Unfilled and fully cooled, they also freeze nicely and can be thawed at room temperature.

Most often the dough did not rise long enough, or the milk was too hot and weakened the yeast. Make sure the milk is only lukewarm and the dough has really doubled in size. Also skip extra flour while kneading, since the soft, slightly sticky dough is what keeps them tender.

Absolutely, you have lots of room to play here. Vanilla pudding, chocolate spread or lemon curd all work, as long as the filling is thick enough to pipe without running out. Fill them after the Berliners have cooled completely so the filling stays put.
