Directions
-
1
Preheat the oven to 180°C (356°F) with the fan setting. Line a baking tray (about 30cm x 34cm) with parchment paper.

-
2
Separate the eggs. Beat the egg yolks, sugar, and warm water until light and creamy.

-
3
In a separate bowl, combine the baking powder, all-purpose flour, and cornstarch. Gradually add this mixture to the egg-sugar mixture, stirring well.

-
4
In another bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter.

-
5
Spread the batter evenly on the prepared baking tray. Bake for 12-15 minutes until the sponge is lightly golden and elastic.

-
6
Sprinkle a clean kitchen towel with powdered sugar. Transfer the slightly cooled sponge to the towel and tightly roll it. Allow it to cool completely.

-
7
Wash, hull, and chop the strawberries.

-
8
Whip the cream with powdered sugar and cream stabilizer until stiff peaks form. Optionally, mix in some strawberry pieces for a pink color.

-
9
Carefully unroll the cooled sponge. Spread the cream evenly on top, and sprinkle the remaining strawberry pieces.

-
10
Roll the sponge back up using the towel as a guide.
-
11
Dust the strawberry Swiss roll with powdered sugar and refrigerate for at least an hour before serving.
