Ingredients
- - 300 g flour (type 405)
- - 30 g sugar
- - 1 pinch of salt
- - 1 packet of dry yeast (approx. 7 g)
- - 150 ml lukewarm milk
- - 50 g butter, at room temperature
- 1 egg
- - 150 g quark (20% fat) or cream cheese
- - 30 g sugar
- - 1 tsp vanilla extract
- 1 egg yolk
- - 250 g fresh strawberries, washed and halved
- - 1 tsp strawberry jam per bun
- - 1 egg yolk, mixed with a little milk
- - Powdered sugar for dusting
Directions
- Place the flour in a large bowl and create a well in the center. Add the dry yeast, 1 tsp sugar, and 2 tbsp lukewarm milk. Stir gently and let sit for 5-10 minutes until the yeast foams.
- Add the remaining milk, sugar, salt, butter, and egg. Knead into a smooth dough for about 10 minutes until soft and elastic.
- Form the dough into a ball, place in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
- Mix the quark with sugar, vanilla extract, and egg yolk until smooth. Set aside.
- Place the risen dough on a floured surface, knead briefly, divide into 16 pieces, and shape into balls.
- Roll each ball into a circle and cut several lines in the center (do not cut through).
- Roll the dough from the uncut side, shape into a circle, and pull the bottom part through the center hole to seal.
- Place the dough circles on a baking sheet lined with parchment paper and let rise again.
- Enlarge the inner circle of each dough circle with your fingers and fill with the quark mixture. Add a teaspoon of strawberry jam on top.
- Brush with the egg yolk and milk mixture. Preheat the oven to 180°C (350°F). Bake for 20-25 minutes until golden brown.
- Let the buns cool on a wire rack. Dust with powdered sugar and place half a fresh strawberry in the center of each bun.
