Preheat the oven to 180°C (350°F) top/bottom heat. Line a baking sheet (26 × 38 cm) with parchment paper.

Beat the eggs, sugar, vanilla sugar, and salt for 5 minutes until fluffy and pale.

Sift in the flour, cornstarch, and baking powder, then gently fold into the batter.

Spread evenly on the baking sheet and bake for 10 minutes.

Immediately turn out onto a kitchen towel sprinkled with sugar, peel off the parchment paper, and loosely roll up. Let cool completely.

Whip the heavy cream with sugar and stabilizer until stiff.

Gently fold in the well drained and chopped mandarins.

Unroll the sponge cake, spread the cream evenly, and roll it back up.
