Preheat the oven to 190°C (375°F).

Cut out rings from the puff pastry. The size of the rings can be adjusted to your preference. From half of the rings, cut a smaller hole in the center. Lightly moisten the whole rings with water so they stick better, then place the smaller rings on top and press lightly. Arrange on a baking tray lined with parchment paper.

Brush with the egg yolk-milk mixture and bake for about 20 minutes until golden brown. Remove from the oven and let cool completely.

Heat the milk in a saucepan. In a bowl, mix a small amount of milk with the egg yolks, sugar, cornstarch, and salt. Slowly pour the hot milk into the egg mixture while stirring constantly. Pour everything back into the saucepan and thicken over medium heat, stirring continuously. Add vanilla extract and stir in the butter. Cover and let cool completely.

Fill the cooled pastries with vanilla cream and top with mandarins.

Dust with powdered sugar and enjoy! Tip: This pastry cream is a base recipe, so there will definitely be leftover cream! You can use it to make delicious layered desserts in glasses or fill other pastries.
