Directions

  1. 1
    Preheat the oven to 190 °C (375 °F) top/bottom heat.
  2. 2
Unroll the puff pastry and cut it once lengthwise down the middle. Brush one half lightly with water, then place the second half directly on top and press down gently.
  3. 3
Cut the layered dough into 5 cm (2 inch) squares. You can also make them larger, e.g. 6-7 cm, if you prefer bigger pastry bites.
  4. 4
Place the squares closely together on a baking tray lined with parchment paper. Lay another sheet of parchment on top and press a second baking tray over it. Bake for 10 minutes - this keeps the pastries from puffing up too much.

Nothing sticks. Everything releases.

Your cake comes out clean, every single time.

Meanwhile, whip the cold cream with powdered sugar and cream stabilizer (if using) until stiff peaks form.
  3. 7
Carefully slice the puff pastry squares in half horizontally (or gently pull apart), pipe or spoon the cream onto the bottom half, and place the top half on top.
  4. 8
Dust with powdered sugar and enjoy fresh. These puff pastry bites not only come together in no time, but they also look so pretty - perfect for sweet little moments.

FAQ

Cream Pastry Bites Questions

You're looking for squares that are golden brown and have puffed up evenly without any soggy or pale spots. If you pressed them with a second tray for the first 10 minutes like the recipe says, they should have a flatter, more even top instead of ballooning unevenly. Give them a gentle squeeze - they should feel crisp and light, not doughy inside.

Yes, the recipe already marks it as optional, so you can simply whip the cold cream with powdered sugar on its own. Just make sure your cream and bowl are really cold before you start whipping, since that helps you reach stiff peaks even without stabilizer. If your cream seems to soften quickly, pop it back in the fridge for a few minutes before piping.

Since these are filled with whipped cream, you'll want to keep them in the fridge rather than at room temperature. They taste best fresh, so try to fill and assemble them close to serving time instead of storing them fully assembled for too long. If you need to prep ahead, keep the baked pastry shells and whipped cream separate until shortly before you serve them.

Yes, you can bake the squares and let them cool completely, then keep them at room temperature in an airtight container until you're ready to fill them. This way you save time later and only need to whip the cream and assemble everything right before serving. Just don't fill them too early, since the cream can make the pastry go soft if it sits too long.

One classic mistake is skipping the trick of weighing down the pastry with a second tray for the first 10 minutes, which can cause the squares to puff up unevenly instead of baking flat and layered. Another one is whipping the cream too long or with warm cream, which can make it grainy instead of smooth and stiff. Cutting the squares unevenly can also throw off your baking time, so try to keep your cuts as uniform as you can.
