Ingredients

Directions

  1. 1
Mix flour, sugar, and salt in a bowl. Add cold butter and rub it in with your fingers until the mixture is crumbly. Add egg yolk and vanilla extract, then knead quickly into a smooth dough.
  2. 2
If needed, add 1 tsp cold water. Wrap the dough in plastic wrap and chill for 30 minutes. Divide into 6 portions, press into tartlet molds, and prick the bottoms with a fork.
  3. 3
Preheat the oven to 180°C (350°F) top/bottom heat. Line the molds with parchment paper and fill with baking weights.
  4. 4
Bake for about 15 minutes, then remove the weights and paper and bake for another 10 minutes until golden brown. Remove from the oven and let cool completely.
  5. 5
Whisk egg yolks, sugar, and cornstarch in a bowl until smooth. Heat the milk in a saucepan until almost boiling.
  6. 6
Slowly pour the hot milk into the egg mixture, stirring constantly. Pour everything back into the saucepan and cook over medium heat, stirring constantly, until thickened.
  7. 7
Remove from heat, stir in vanilla extract, and cover the surface with plastic wrap. Let cool completely. Whip the heavy cream with 1 tsp powdered sugar until stiff and fold into the cooled pastry cream.
  8. 8
Spread 1 tsp of jam over each tartlet base. Evenly spread the diplomat cream on top.
  9. 9
Decorate with fresh berries and mint leaves. Lightly dust with powdered sugar before serving. If you have any leftover diplomat cream, it makes a wonderful dessert in a glass.

FAQ

Berry Tartelettes Questions

Yes, you can bake the shells and cook the pastry cream separately a day ahead. Keep the cream covered with plastic wrap on its surface in the fridge, and store the cooled shells airtight at room temperature. Whip the cream, fold it in and assemble just before serving, so you get a crisp base and fresh berries.

Moisture from the cream is the usual culprit. The thin layer of jam under the cream helps as a barrier, and the shells must be completely cool before you fill them. Fill them shortly before serving, because the longer they sit, the softer the crust gets.

Dried beans, rice or lentils work nicely on top of the parchment paper, since they just need to hold the dough down. Reuse them for baking only, as they will not be good for cooking afterwards. The weights keep the sides from slipping and the bottoms from puffing up during the first 15 minutes.

Pour the hot milk in slowly while you whisk the egg yolk mixture constantly, so the yolks warm up gently. Then keep stirring over medium heat once everything is back in the saucepan. If a few lumps still appear, press the cream through a sieve before covering and cooling it.

They taste best the day you assemble them, while the shell is still crisp and the berries look fresh. If you have leftovers, keep them covered in the fridge and enjoy them soon. Add the powdered sugar dusting and mint right before serving, since the sugar melts into the berries as it sits.
